This is a crisp and lively wine with beautiful aromatics. It
exhibits flavors of citrus and apple with a hint of mineral
qualities.

Vintner’s Notes:
We picked and crushed the grapes cold and fermented the must
at 60 ºF. The cool temperature helps maintain the fruitiness
while allowing the yeast to maximize mouthfeel. We aged the
wine on the lees and stirred the tank weekly to add a richer
texture and improve the flavor profile. The wine was bottled
after aging 7 ½ months on the lees.
